Since the day I met Dev he has been super into the NFL. At first it was just the Seahawks. I didn’t really understand all the strategies and particular rules but he said he’d rather me watch and ask any questions I had so that we could see if I would eventually like it as well (what a long shot). I ended up really liking it! We would usually hang out with his family, watch the game, eat crepes and drink mimosas. I loved our football Sunday tradition. Each year he has gotten more and more into football. This has been his second year of doing Fantasy football and he started his own league with his best friends. He seemed to have a lot of fun nerding out. Although for “us” it meant we were watching every single football game on TV. Which is all day Sunday, all night Monday and all night Thursday. Don’t get me wrong, Dev works extremely hard and his job is very demanding so the guy can watch his football. But needless to say, I am excited for the football free months that lay ahead. We just have a Super Bowl party Sunday and then FREEDOMMM!! I am mostly kidding though because I know I’ll start to miss it too.
I’m stoked for the Super Bowl party! My sister Avery is watching Oaks and I get a baby free day to stuff my face full of food and hang with my friends! However, I am always on the struggle bus to figure out a tasty appy to bring that doesn’t require random ingredients I will never use again yet is easy to make but still feel confident bringing. No one wants to be the poor sucker who brought the food no one ends up eating (isn’t it always the same person?!). So I’ve got a super simple Meatball slider recipe (stolen from my mom) and the easiest chicken and waffle recipe (stolen from my in laws) – I’m a recipe thief!
For The Meatballs:
1 large package lean ground beef
Small package of ground pork
Small package ground veal
Caesar salad croutons (pulsed in a food processor until fine crumbs)
1 small bunch fresh parsley finely chopped
1 small bunch fresh basil finely chopped
1 small onion finely chopped
4 cloves of garlic minced
1/4 cup milk
1/2 cup fresh grated parmesan cheese (feel free to add more)
Salt & Pepper to taste
Add everything into a large mixing bowl and use your hands to mix it all together until combined. Using a medium cookie scoop, shape into roughly 2 inch sized balls. Place on a cookie sheet lined with tinfoil and bake at 400F for 30 minutes. Once they are cooked I throw them into the crock pot and cover them with my favourite pasta sauce (I use this one). I toast up some mini slider buns (I like the ones from Cobs Bread) and then throw them all together & stick them with a toothpick so they are easier for people to grab!
For The Chicken & Waffles:
1 box frozen chicken nuggets
2 cups all purpose flour
3/4 cup sugar
3-1/2 teaspoons baking powder
2 large eggs separated
1-1/2 cups milk
1 cup butter melted
1 teaspoon vanilla extract
In a bowl combine flour, sugar and baking powder. In another bowl lightly beat egg yolks then add the milk, butter and vanilla. Mix until combined. Stir into dry ingredients until just combined. Beat egg whites until stiff peaks form and fold into batter. Bake in a preheated waffle iron. Once the waffles are made use a 2-3 inch circular cookie cutter to make circular rounds.
Bake the chicken nuggets according to the directions on the box.
For the sauce, combine and mix:
1 cup mayonnaise
1/4 cup pure maple syrup
1/2 teaspoon mustard powder
1 teaspoon horseradish
Stack the chicken onto the now mini waffles and drizzle with sauce. It’s also super tasty with maple syrup drizzled on top!
