Summer Dinner Meal Plan

Anyone struggle with planning meals like me?!

Pre-baby we were on top of meal planning, but for the past few months we’ve fallen off the wagon. This is our first week back on and I’m sharing the list of meals we’re planning this week- maybe some will inspire you as well!

We double most recipes so that we have leftovers for lunch the next day. Also, am I the only one that finds ‘serves 6’ means ‘serves 2’?!

Monday :

Grilled Corn & Zucchini Salad with Sun-Dried Tomato Vinaigrette *we add chicken breast*

Tuesday :

Beer Braised BBQ Pork Butt for Pulled Pork Sandwiches


We add pickles and chipotle mayo

Wednesday :

Montreal Smoked Meat Sandwich – we use a brisket from Davis Meats locally. We also add sauerkraut and chipotle mayo.

Mixed greens salad- we keep ours very basic just using greens and dressing but you can add some interest to the salad with peppers etc 

Thursday :

Grilled chicken breast with Southwestern Salad.

Friday :

Homemade burgers – we use Portofino buns which are SO good! We add sautéed onion, pickles, cheese, chipotle mayo and jalapeños. You can obviously add whatever you’d like.

Saturday :

Takeout! We’re stopping by Good Taco to get 3 for 12 tacos 

Sunday :

Pizza! Since I am unable to have dairy with Odelle’s sensitivity, we eat Daiya Pizza Supreme. Pre-baby Benton would make my favourite Apple, Gorgonzola recipe.
