Alrighty so making food while being a new mom is difficult. I’d love to be one of those do it all moms that is baking pies in the kitchen, but the truth is I’m just trying to survive over here. Some days I’m lucky to have a couple of eggs before it’s dinner time!
When Benton and I first got married we made protein bars. We have been adjusting the recipe so that it is completely vegan, gluten free and delicious.
Oh yes, and it’s simple to eat on the go which is perfect for those days of clingy babies 😉
1 Cup of Peanut butter
½ Cup Agave Nectar or Honey
1½ Cups Almond milk
½ Cup Vegan chocolate chips (you can buy these at Save-On)
½ Cup unsweeted apple sauce
2 tsp of Vanilla extract
4 Cups of gluten free oats
2 Cups of Vega protein powder
4 Tbsp Cocoa powder
4 Tsp Stevia
2/3 Cup of dried cranberries
½ Cup of diced pecans or almonds
1 Tbsp of Cinnamon
Mix all of the dry ingredients in a stand mixing bowl (you don’t need to use a stand mixer, you can do it by had but you’ll need to put your back into it to mix everything together).
Add all of the wet ingredients into a sauce pan and crank it to medium heat. Continue to stir until everything is well combined.
Add the wet ingredients into the dry ingredients and mix together. If it looks a bit dry then add some more almond milk.
Next, take some wax paper and line a pan. Rub a little bit of olive oil around the wax paper to ensure the mixture doesn’t stick to it. Add the mixture to the pan and cover. Put it into the fridge for a few hours to harden everything.
Once it’s done setting, take it out and cut it into pieces. You can individually wrap each or just keep it in a glass container until you want to eat it.
