Holiday Gingerbread Martini


I’m all about the Christmas spirit! I feel like the moment December begins I become Elf and want to shout from the rooftops “I love Christmas!”. But that’s not socially acceptable. So instead, I indulge myself in all the typical Christmas activities. Including parking my pregnant butt near the food at as many Christmas parties as I can! Except this year seems to be lacking on the Christmas parties, so Heather & I decided to throw our own. We cooked and baked up a storm,  while our mixologist husbands created some saucy Christmas cocktails (which I watched them drink with disdain). One of the drinks they came up with was a really, really, ridiculously delicious gingerbread martini (yes I had a sip, call me irresponsible). Get your ingredients today and test this bad boy out this weekend, you won’t regret it!

Christmas Cocktail - Gingerbread Martini

The Recipe:

Ingredients (Per Cocktail)

2 ounces Baileys Irish Cream
2 ounces Tito’s Vodka
1 ounces Kahlua
1 ounces Gingerbread Syrup, recipe follows
1 small scoop vanilla ice cream, softened
Whipped cream, for topping
Small handful gingerbread cookies, crushed

Gingerbread Syrup

1/4 Tbsp. fresh ginger, diced
1/2 tsp. ground nutmeg
1/2 Tbsp. ground cinnamon
1/4 tsp. ground allspice
500 ml. water
250 ml. sugar
200 ml. molasses

For the Syrup

Toast spices in a dry saucepan for 3 minutes over medium-high heat, until aromatic. Add water, sugar and molasses and cook heat until sugar has dissolved and mixture is thick and syrupy. Cool, then pour through a fine mesh strainer to remove graininess of spices. Make the gingerbread syrup beforehand and let cool in the fridge in an airtight container. It can stay refrigerated for up to 2 weeks.

For the Drink

Combine the Baileys, Vodka, Kahlua, Gingerbread Syrup and ice cream in a cocktail shaker. Add ice and shake well. The ice helps to break up the ice cream. Pour into coupe or martini glasses. Top each with a generous dollop of whipped cream and a sprinkling of gingerbread cookie crumbs.
